Ingredients

• 1 package vegan friendly phyllo dough, thawed
• 1 cup walnuts, finely chopped
• 1 cup pistachios, finely chopped
• 1 teaspoon cinnamon
• 1 teaspoon cardamom
• Pinch of salt
• 1 cup neutral oil or light olive oil
• 1 teaspoon vanilla

Syrup
• 1 cup sugar
• 1 cup water
• 1 cup maple syrup
• 1 tablespoon lemon juice
• 2 strips lemon peel or orange peel

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Mix the chopped nuts, cinnamon, cardamom, and a pinch of salt in a bowl.
  3. Lightly grease a baking dish. Lay the first sheet of phyllo inside and brush with oil. Repeat for about eight layers.
  4. Add a thin layer of the nut mixture. Place another four phyllo sheets on top, brushing each with oil. Add more nuts. Continue layering until ingredients are used, ending with eight sheets of phyllo.
  5. Using a sharp knife, cut the baklava into diamonds or squares before baking.
  6. Bake for 40 to 45 minutes, or until the top is golden and crisp.
  7. While it bakes, prepare the syrup. Combine sugar, water, maple syrup, lemon juice, and lemon peel in a pot. Simmer for 10 minutes, then remove from heat and stir in vanilla.
